If I am having some kind of vegetables serving, it must be somtam style, really refreshing. Use some fish sauce and sesame oil to bring everything together. In this serving, just prepare enough iceberg lettuce, carrot ribbons, Japanese cucumber, diced tomatoes and cilantro. Splash some fish sauce and sesame oil according to your taste and do not forget about 2 tablespoons of coarsely crushed garlic flavored cashew nuts on top. Um um yum! Having it with some steamed chicken thigh tonight.
