A crush on Enokitake

Which Japanese singer you might wonder! Behold, enoki mushroom (enokitake エノキタケ)!



This mushroom is almost like ulam- it can be eaten raw, which retains its delicate flavour. Enokitake can never be overcooked because it will be really chewy and fibrous, i.e hard to chew. So simply add in enoki when your cooking is about done. I usually put enoki in our traditional soup (clear soup), stir fried veggies, and pasta meal. I always cut them into 3 parts, making them shorter and easier to be consumed. Enokitake are usually sold in small packets and I usually use half of a packet to cook one dish.
Enokitake is said to be highly nutritional, packed with vitamins and minerals. It is also reported to have medicinal properties.
